Ya’ll…I am about to share one of the easiest and most delicious recipes with you!
I can’t take credit for this recipe- that all goes to my mama! Thanks mom! 😘 This recipe was a regular at my home growing up and my siblings and I still make it today. It is so good!
The best part aside from my husband loving it is so do all my kids. Yes, that is right, my 6-year-old, 4-year-old and 2-year-old eat this salad. All are your typical picky eaters but they ask for seconds and thirds when this is made. Another benefit is that this meal has made them more open to trying other salads. You have to give it a try!
Taco Salad Recipe
Ingredients
- 1 lb ground beef
- 1 package of taco seasoning (I use low sodium one)
- Thousand island dressing
- Romaine Lettuce
- 1 package of shredded Cheddar Jack Cheese
- Tostitos
Instructions
- Cook beef in skillet until browned
- Drain grease
- Add the packet of taco seasoning and mix well
- Chop romaine lettuce and add to a large bowl (I choose romaine because my kids prefer a good crunch but any kind will work)
- Add the amount of beef you’d like
- Add cheese
- Crumble Tostitos and add
- Drizzle dressing on top and mix well
I typically will mix about half of what I have and if I need more will make the rest. If you make it all at once the left overs won’t last.
It is that simple. The thousand island dressing + taco seasoning tastes so good together. Feel free to add extra toppings as well (tomatoes, corn, avocado, black beans) if you want more goodness in there. On occasion I’ll chop up spinach and add chia seeds to it and they don’t notice. But usually I stick to the original.😋
I serve it with rice, fruit and a few chips on the side.
The first time my kids ate it they went for the chips on the side first and then realized there were chips in the salad. They started picking them out and within a few minutes fully indulged. 🙌🏼
